Hiya
You do it from the home screen. If you are not on the home screen hit the house shaped button in the top left had corner. Near the top on the right had side you see a little gear wheel. If you click that there are tick boxes, one says set default bible - tick this and leave the settings menu. There will now be somewhere on your home screen a little area for setting default bibles :-)

Logos wiki has => Prioritizing
Default Bible is the highest prioritized.
You do it from the home screen.
Home Screen setting to Choose Preferred Bible causes selected Bible to become your highest prioritized resource.
