I heard in a sermon once that 10 of the remaining 11 disciples were martyred for their faith. I read elsewhere on the web that this is not true. I am sure I have a resource that answers this in a scholarly yet accessible way. How would I find it?
Do you have "Foxe's Book of Martyrs"?
He has clear statements about what happened - but it would be good to get confirmation from other sources as well

Foxes' Book of Martyrs is probably your best resource for this.
Twelve Ordinary Men by John MacArthur does discuss what tradition says about how the apostles died. However, this is very brief, so if you get this book just for that information you will likely be disappointed.

While Foxe's book of martyrs certainly records traditions, it does not provide a scholarly evaluation of the reliability of these traditions.
I am not sure how "scholarly" it is, but Evidence that Demands a Verdict has a chapter dedicated to discussing the question from an apologetic point of view (part 2, chapter 13). Here a couple excerpts:
