How do I change the versions the display in text comparison on my iPad?

It should be based upon the "prioritized" translations in the desktop app. Your mileage may vary.
Okay, I have 5 versions set as my preferred versions in the Text Comparison page on the desktop app, but it doesn't sync to my iPad. Not certain that is what you mean. I am brand new to Logos so do you mind explaining.

Sorry, no. In Logos, you can "prioritize" resources which allows you to receive hits from those resources first when you run guides. See this wiki article: https://wiki.logos.com/Prioritizing
