I have the Greek and Hebrew videos and m wondering if I upgrade o Logos 5, how will that impact the information in these videos?
I don't have the video's John so I can't be precise. I know this though:
All that L4 did and does is still in L5.
Some of it may be slightly different in implementation but we'll be here to help you out.

The methods used in the Greek and Hebrew videos are still the same in Logos 5. There are some new features that may allow for users to get syntactic force on a word in the Exegetical Guide Word By Word analysis etc. So the bottom line is that Logos 5 can make using what you learn from those videos easier to apply to your studies.
The use of visual filters and other resources discussed in the videos does not change.

It would be really awesome if you guys maybe put out a pdf or short video with a "how to" for using some of the new Logos 5 features as part of these already awesome and practical videos.
One big change is that the Hebrew Visual Filters suggested in the videos to use with the ESV or one of the Reverse Interlinears will no longer work in L5 in those resources because they changed the Hebrew Morphology to Logos Hebrew Morphology from Andersen Forbes. They should not be too difficult to rebuild and is a good refresher for what they are highlighting[:D] The Greek work fine... Just a little heads up.

Handouts are deprecated.
They are still there in L5Win just as they were in L4Win. For new users, I believe they are not visible by default on the documents menu. But if you have used handouts in the past they should be there. Also because they are deprecated, there are no plans to add them to Mac. .Mono, the underlying tech for Mac never supported, and now we learn, won't support the underlying tech that handouts rely upon in L4Win/L5Win.

This is available under the Document menu or create new handouts bu typing "Create Handout" in the command box. Both work on my windows install of L5. My understanding of Depreciated is that it relies on feature in .Net that Microsoft has said they won't be supporting going forward. Is that your understanding as well?
