It's impossible purchase some of the material for NT281

A Moody published resource is listed as one of the readings for NT281....From God to Us: How we Got our Bibles in Segment 6 on the Order and Structure of New Testament Books. It is a reading on the extent of the New Testament Canon.

This book, From God to Us is an abridgment of Geisler and Nix,  General Introduction to the Bible, also a Moody book no longer available, but I do own that resource.  From what I can see on Amazon preview of From God to Us the reading we are meant to read includes material from chapter 17 of the GIB, in regards to books accepted by all, and books rejected by all, but there seems to be some concluding material not from this chapter, possibly drawn from other parts of GIB since it is an abridgment or it may be new material.

Of course though this is not going to be a solution for all.  The real solution is to take a little bit extra care when selecting readings for these courses and ensuring a resource that is no longer available is not chosen and even when a major publisher breaks ties with Logos reviewing all existing courses to see if any readings are affected and what additional readings could be added as a substitute - a similar reading will not always and probably not often be available but an alternative directed reading on that topic should be available within the Logos 'Canon' of resources.
