We will shortly be holding a Parish weekend away. On the Sunday we would like to use Proclaim to run a service for it. However this will be at the same time as the service back in our home church. Can these 2 services happen simultaneously?

I am sure you can but it would still be a good idea to have an experiment beforehand.
Fail to prepare, prepare to fail.
We do this every Sunday, we have two sessions running simultaneously. One is the in-house computer and the other is the live-streaming computer. We usually have two different A/V techs running each version, but one guy can handle it in a pinch.
The only thing you have to handle in a hurry is on-the-fly changes.
