I was thinking first of lectionaries and sermon collections: Create a visualization for the entire Bible canon in which the verses are colored with increasing intensity by the number of times it is referenced. This would allow one to see at a glance the textual biases of a particular lectionary or preacher.
A similar approach to the corpus of influential Church Fathers, Doctors of the Church and theologians could also be helpful.
