Notes provide a better selection of usable colors for text and background because only some of them are visually close shades to one another - you have more selections of distinct colors.
Sermon Builder has only a few usable colors because so many of them are visually close shades to one another, so when you use them in a sermon you can't tell which was used unless they are used side-by-side.
Perhaps a better color selection would be the primary and secondary colors in regular and light shades.
