Turns out I already bid on all of these over a year ago. I would definitely like to see them break through on Community Pricing.

I still think that this collection would do much better broken up by Saint, especially since psychological research has shown that people tend--quite irrationally--to value collections of items containing some items they don't want as less valuable than the same collections only without the undesired items.
I imagine that there are a good number of people who would, for example, bid $10 USD on the two St. Isaac Jogues volumes and another $10 USD on the St. Damien volumes who have not bid $20 or more on the entire collection. And that's even when we ignore how boring-sounding and interest-destroying a title like "American Catholic Saints Collection" is.

Probably a dumb question, but when these things go from gathering interest to in progress, does Logos give advanced notice that we'll be charged so we can make sure we can cover it?

Yes. When the development process is getting close to the end Logos will provide a ship date. At 2-3 weeks ahead of that ship date, those that have pre-ordered will receive an e-mail notifying that the order is about to be processed.

Steve is correct. You will receive notice when something you bid has crossed the 100%threshold (giving you an opportunity to increase your bid if necessary or to cancel if you wish). Then you receive another notice before it ships. Then you receive notice when it actually ships. And you can return anything 30 days after the ship date for a refund.
I generally bid on anything I'm remotely interested in. If I'm only a little interested, I may bid the minimum just so that I receive a notification and can revisit whether or not I want to increase my bid once it gets close to 100%.
