I am looking to buy an Apple iMac Desk Top. Can anyone suggest what configuration is required to get the most out of Logos? 21.5" or 27" OS RAM GB SSD etc..??

Well, when I had a 13.3" rMBP (2013) my 512gb SSD was ample, but 8gb was laboring a bit with Logos 8 (it worked fine with Logos 7). I imagine a newer machine and a desktop would be more powerful, but that was my experience.
21.5" or 27"
I know that some want the BIGGEST screen possible. I am not one of them. IMO the 21.5, for the purposes of Logos, is almost too big. On the other hand, having a second monitor has advantages. I would rather have two smaller monitors that one huge one.
As for SSD, 256 is a minimum. If you can get 16 GB Ram, do so.
EDIT: I have not kept up with the iMacs. If the Ram is "user upgradable," do it yourself. I love Apple, but there is no reason to pay the apple tax on ram if you can replace it yourself.

Most recent 27" iMac model (with 5K Retina Display) has RAM that can be easily upgraded to 128 GB (albeit Apple advertises 64 GB max using four 16 GB SO-DIMM's). Removing power cord allows access to memory access release button. 2019 iMac RAM from Apple has CAS timing of 19-19-19-43 that can be replaced with faster CAS timing of 15-17-17-37. Thread => Computer specs used @ Logos for large libraries mentions faster iMac RAM improving Geekbench while having negligible effect on indexing library resources.

Personally like one 27" monitor: configured Display scaling to show more space (smaller font size is close to my handwriting size). To me, one 27" monitor is two seamlessly connected smaller monitors, which has more flexibility for sizing and placement of windows.

Upgradeability of 21.5" iMac depends on model and technical skill (non-trivia to cut & replace double sided tape holding glass to frame). I Fix It web site has many iMac model tear-downs and repair guides. In contrast, 27" iMac has "user upgradeable" RAM.
