Slide numbers, either throughout the presentation or restarting for each new item, would be helpful for purposes of taking notes on what needs to be edited

We just released this in an update a few weeks ago! In Proclaim 3.6, go to View in the file menu, then choose Show Service Item Indices. Proclaim will show the service item number in the Order of Service and the per-service-item slide index in Preview mode.
