Constant freeze on Hebrew lookup
I am on iPad Pro 10.5, using the beta release of March 28. I have several Hebrew lexicons downloaded to the iPad, but none of them appear when I do the offline look up. Instead, it seems to be defaulting to German glosses. Moreover, I’ve done it a dozen times in a dozen different passages, and every time it freezes and I have to restart the app for it to respond at all. Screenshot attached.

Same here... IF online. While offline, it seems to work better. However, when offline it gets its info from NLT for some reason!

In general that's due to prioritisation.
The NLT has a section at the back called "Bible Verse Finder" with a lot of themes and linked passages. These are indexed by English headwords and so show up in these types of lookup.

A correction and additional note to my earlier post:
If in LHB or BHW the freeze occurs immediately whether online or offline. When in ESV (online) the freeze only occurs once the popup info is populated. In other words after the long press I can still scroll in the ESV UNTIL the info populates.

In general that's due to prioritisation
I suspected the same, but this happened even after totally removing NLT from prioritization and trying to make sure that that change would be pushed to my device. I now believe it has to do with RI lookups not working offline (it was doing an English lookup). As soon as I removed NLT from my downloaded library, I get the standard English (iOS) dictionary popup like I had been getting with other words.

Sorry Phil, I haven't needed to use even my first towel 😉 since this update renders the app less usable than before (I have to be careful NOT to select a word accidentally if I don't want a totally frozen app)!

Same problem here. Freezes almost every time I lookup a word in Hebrew. Haven't tried other languages yet.

Works like a charm on my iphone SE! Greek and Hebrew including Bible Word Study.

not sure if last digit matters but i'm on iOS 11.2.6

Yeah, same here. That's too bad. It minimizes my hope of a fix via an iOS update (just discovered 11.3 is available and in the process of downloading with the (now lame) hope that it would clear up my issue!
