I would love to see dropdown arrows as a possible option in sermon documents, or even just another way to organize and minimize certain parts of the sermon.

In the current absence of dropdown arrows you might find the left sidebar helpful.
This shows the headings in your sermon as an overall outline - you can click one of the headings to move to that place in the sermon text or you can drag a heading to another position in the outline (and that moves the associated text underneath it as well)

Windows on ARM has a big app compatibility issue still, it would be great to see Logos be compatible. If it can work on Apple silicon (which is also ARM-based) then it should on Windows on ARM as well.
