It would be great if they provided an UNDO - REDO button in Notes. There have been times, I've accidentally deleted a note and had no way of getting it back.

I agree. I've accidentally deleted text within a note and couldn't find how to undo!!
Ctrl-Z works in Notes. And if the side menu is openend, you can find the trashcan at the bottom of the panel.
How do I do ctrl-Z on mobile? (That's my issue)
