Removing default text from media library image

I've somehow made the text "Happy Birthday Pastor" the default for some of the preloaded image files in Proclaim, along with making a whole new picture series for one of them. Is there a way to delete the new picture series and remove the default text. These seem to be global changes

Video upload
I am wondering why I cannot upload videos from my computer to proclaim when I am putting a service together. I have downloaded the upgrade, even uninstalled and then reinstalled the program in my computer. I have never had this issue before and I am so frustrated.
Warm up timer
Is there a way to add a countdown timer without editing slides? I connect all my slides so that I can change one and it changes multiple (pre-service, warm-up, service, and post-service).
