A number of denominational presses are very small - they have very few titles available yet those titles are particularly interesting as they provide nearly everything available about the denomination. Others are small because most of the material about the denomination is not available in English. Often these materials are more large pamphlets rather than long studies so they aren't feasible on their own. But if you offered them as collections in the $30-40 range I suspect there would be a market.

You could test the market on the Eastern rites of the Catholic Church which are of interest to Catholics and Orthodox with additional current interest due to the Christian refugees flooding out of the Near East. Some publishers to consider:

The Copts are Oriental (Syriac) Orthodox not Eastern (Byzantine) Orthodox i.e.  "pre-Chalcedonian" - but both the Eastern Orthodox and the Catholics have signed ecumenical statements negating this divide. The Ethiopian Orthodox Tewahedo Church was granted autocephaly in 1959,  Eritrean Orthodox Tewahedo Church in 1998. So the Tewahedo Church must be included in any overview.

Copts more broadly include Oriental Orthodox, Eastern Orthodox, and Catholic churches. Egypt also has branches of other churches in communion with the Copts. Base churches in order of number of adherents: Coptic Orthodox Church of Alexandria, Greek Orthodox Church of Alexandria; Coptic Catholic Church; examples of churches in communion: Melkite Greek Catholic Church, Armenian Apostolic Church, Latin Catholic Church, Maronite Church, Syriac Catholic Church, Armenian Catholic Church, Chaldean Catholic Church, Syriac Orthodox Church . . .

There are a number of Coptic resources available in electronic form - some in public domain, some available for free, some very inexpensively distributed. Logos might well be able to negotiate a mutually beneficial arrangement with COePA(Coptic Orthodox Electronic Publishing, Australia and St. Shenouda the Archimandrite Coptic Society.
