On an Ipad Pro - top right there are three dots stacked.click or touch the dots - and you get a drop down, with ability to choose 'view settings'.
Selecting 'view settings' gives you several settings to select from. For background you have;
System, White, Sepia, Black
So I found it but the documentation is for iPhone not iPad which threw me off.
