I would love to have an additional option in 'View Options' that allows me to toggle on or off all of my highlighted text in the Bible.

It is actually there. Since highlights are notes (just with less text), it is found under the Notes menu: a large button that toggles the display of all notes and highlights:

A nice improvement would be to have bolder or thicker separator lines in parallel text view, especially when viewing the parallels in horizontal rows.
